Daikon radish is a fast growing and versatile veggie to grow in your patch. Also known as a 'tillage radish' this is a great quick crop to grow to break up clay soil (check out our video here on how we use these for that). On top of that it is the most underrated versatile veggie, it grows fast and big! You can cook it up, ferment, pickle or eat raw. You don't have to let it get as big as we did (blink and they will though). Let it go to seed and the bees will love you! Daikon will grow all year in most climates but can become bitter if it does not get adequate water (sweeter over the cooler months).
